A fresh and vibrant Greek Orzo Salad perfect for any occasion.
Ingredients
- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook the orzo pasta according to package instructions. Drain and let it cool.
- In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
Notes
For best results, let the salad sit for a little while to blend the flavors. Store leftovers in an airtight container for 2-3 days.
