Description

Ingredients

  • 8 oz pasta of your choice
  • 2 cups fresh corn (or canned/frozen corn)
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Optional: Cotija cheese for garnish


Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine cooked pasta, corn, red bell pepper, red onion, cherry tomatoes, and cilantro.
  3. In a separate bowl, mix lime juice, olive oil, salt, and pepper to create a dressing.
  4. Pour the dressing over the pasta salad and toss gently to combine.
  5. Fold in the diced avocado just before serving.
  6. Serve chilled or at room temperature, garnished with Cotija cheese if desired.

Notes
