Ingredients
- 8 oz pasta of your choice
- 2 cups fresh corn (or canned/frozen corn)
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 1 avocado, diced
- 1/4 cup lime juice
- 1/4 cup olive oil
- Salt and pepper to taste
- Optional: Cotija cheese for garnish
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- In a large bowl, combine cooked pasta, corn, red bell pepper, red onion, cherry tomatoes, and cilantro.
- In a separate bowl, mix lime juice, olive oil, salt, and pepper to create a dressing.
- Pour the dressing over the pasta salad and toss gently to combine.
- Fold in the diced avocado just before serving.
- Serve chilled or at room temperature, garnished with Cotija cheese if desired.
