Description

A fresh twist on the classic Caprese salad with ripe avocados, juicy tomatoes, and creamy mozzarella, drizzled with olive oil and balsamic vinegar.


Ingredients

  • 2 ripe avocados
  • 2 cups cherry tomatoes
  • 8 ounces fresh mozzarella balls
  • 1/4 cup fresh basil leaves
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste


Instructions

  1. Start by cutting the avocados in half. Remove the pit and scoop the flesh out with a spoon. Slice the avocado into thin pieces.
  2. In a large bowl, add the cherry tomatoes and fresh mozzarella balls.
  3. Add the sliced avocado to the bowl.
  4. Tear the basil leaves and sprinkle them over the salad.
  5. Drizzle olive oil and balsamic vinegar over everything.
