Ingredients
- 2 ripe avocados
- 2 cups cherry tomatoes
- 8 ounces fresh mozzarella balls
- 1/4 cup fresh basil leaves
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Start by cutting the avocados in half. Remove the pit and scoop the flesh out with a spoon. Slice the avocado into thin pieces.
- In a large bowl, add the cherry tomatoes and fresh mozzarella balls.
- Add the sliced avocado to the bowl.
- Tear the basil leaves and sprinkle them over the salad.
- Drizzle olive oil and balsamic vinegar over everything.
- Season with salt and pepper to taste. Gently toss the salad to combine all the ingredients.
- Serve immediately for the best flavor.
Notes
For a vegan option, skip the mozzarella and add extra veggies like cucumbers. Best served fresh.
