Description

A delicious and healthy meal combining avocado, pesto, and eggs, perfect for breakfast or brunch.


Ingredients

  • 2 slices of bread
  • 1 ripe avocado
  • 2 tablespoons pesto
  • 2 eggs
  • Salt and pepper to taste
  • Olive oil (for frying, optional)
  • Red pepper flakes (optional)


Instructions

  1. Toast the slices of bread to your desired level of crispiness.
  2. Heat a small pan over medium heat and add a little olive oil if desired.
  3. Crack the eggs into the pan and cook to your preferred doneness (sunny side up, over easy, etc.).
  4. Mash the avocado in a bowl and season with salt and pepper.
  5. Spread the pesto on the toasted bread, followed by the mashed avocado.
  6. Place the cooked eggs on top of the avocado.
  7. Sprinkle with red pepper flakes if desired, and serve immediately.

Notes

Best served fresh. You can customize by adding sliced tomatoes or crumbled feta cheese.
