A delicious and healthy meal combining avocado, pesto, and eggs, perfect for breakfast or brunch.
Ingredients
- 2 slices of bread
- 1 ripe avocado
- 2 tablespoons pesto
- 2 eggs
- Salt and pepper to taste
- Olive oil (for frying, optional)
- Red pepper flakes (optional)
Instructions
- Toast the slices of bread to your desired level of crispiness.
- Heat a small pan over medium heat and add a little olive oil if desired.
- Crack the eggs into the pan and cook to your preferred doneness (sunny side up, over easy, etc.).
- Mash the avocado in a bowl and season with salt and pepper.
- Spread the pesto on the toasted bread, followed by the mashed avocado.
- Place the cooked eggs on top of the avocado.
- Sprinkle with red pepper flakes if desired, and serve immediately.
Notes
Best served fresh. You can customize by adding sliced tomatoes or crumbled feta cheese.
