Ingredients
- 2 medium sweet potatoes
- 2 cups cooked chicken, shredded
- 1 cup BBQ sauce
- 1 medium red onion, chopped
- 1 cup corn
- 1 cup cheddar cheese, shredded
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
- 1 tsp smoked paprika
- 2 green onions, sliced
Instructions
- Cook sweet potatoes until they are soft.
- Add chopped red onion and corn to the skillet.
- Stir in cooked chicken and BBQ sauce until everything is heated.
- Top with cheddar cheese and let it melt before serving.
Notes
Garnish with sliced green onions for extra flavor. Serve with a side salad for a complete meal.
