Ingredients
- 4 boneless, skinless chicken breasts
- 4 medium potatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh herbs (like rosemary or thyme) for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- In a large baking dish, combine the diced potatoes, olive oil, garlic powder, paprika, salt, and pepper. Toss to coat the potatoes evenly.
- Push the potatoes to the sides of the dish, then place the chicken breasts in the center. Brush the chicken with olive oil and season with salt and pepper.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the potatoes are crispy.

Notes
