Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 medium potatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh herbs (like rosemary or thyme) for garnish


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large baking dish, combine the diced potatoes, olive oil, garlic powder, paprika, salt, and pepper. Toss to coat the potatoes evenly.
  3. Push the potatoes to the sides of the dish, then place the chicken breasts in the center. Brush the chicken with olive oil and season with salt and pepper.
